Christmas  Hazel Nut Chocolate Cookies


  • 180 grams unsalted butter
  • 260 grams flour
  • 100 grams ground hazelnuts
  • 80 grams powdered sugar
  • 2 egg yolks
  • Lemon grated peel
  • Salt
  • Cinnamon
  • Apricot jam
  • Rum
  • About 400 g dark chocolate
  • Hazelnuts, sugar crystals or other decoration


Sieve the flour into a heap on a pastry board or into a large bowl.

Cut the cold butter into small pieces; add powdered sugar, ground hazelnuts, lemon, a pinch of salt and cinnamon and the egg yolks.  

Rinse hands with cold water and quickly knead mixture into crisp dough. Chill for an hour.

Roll out the dough on a bit of flour and cut out stars – if you prefer cutting out different motives, make sure to have two of the same!

Bake at slow to medium heat (175° Celsius) for 10-15 minutes, or until very light gold in color. Let the cookies cool down. Stir the apricot jam with a pinch of rum till smooth, then put together to matching cookies with the jam. Melt the dark chocolate over heated water and put one side of the cookies into it. Decorate the cookies to your taste and let them cool overnight. Then store in boxes using tissue paper…..have fun baking and tasting!
