Famous Austrian Vanillekipferl
- 200 grams butter
- 250 grams flour
- 100 grams ground almonds
- 80 grams powdered sugar
- 2 egg yolks
- powdered sugar (plenty)
vanilla sugar (plenty)
Sieve the flour into a heap on a pastry board or into a large bowl.
Cut the cold butter into small pieces ,add powdered sugar, ground almonds and the egg yolks,
Rinse hands with cold water and quickly knead the mixture into crisp dough. Chill for an hour.
Form thumb thick rolls from the dough, cut into 1 cm wide pieces, roll and form crescents.
Bake at slow to medium heat (175° Celsius) for 10-15 minutes, or until very light gold in color.
Turn the crescents in a mixture of powdered sugar and vanilla sugar while still hot. Store in boxes between layers of tissue paper …… Enjoy!
