San Daniele del Friuli ist ein kleiner beschaulicher ein Ort im Friaul-Julisch Venetien. Vielen ist der berühmte Prosciutto bekannt der hier produziert wird – kaum jemand aber weiß warum ausgerechnet hier der besondere Ort ist an dem es m möglich ist Prosciutto dieser Qualität herzustellen – diesen Geheimnissen wollen wir nun auf den Grund gehen!
Prosciutto di San Daniele – einzigartig, wie er nur hier entstehen kann
Für den besonderen Schinken wird nur Fleisch von Schweinen verwendet die in Italien gezüchtet werden – bei den Zuchtmethoden wird besonders auf das Wohlbefinden der Tiere geachtet. Die Produktionsrichtlinien schreiben eine Fütterung der Schweine werden nach einem kontrollierten Diätplan vor, hochwertige Molke und Getreide sind wichtige Bestandteile davon!
San Daniele und das Klima – die wichtigste Zutat für den wunderbaren Prosciutto!
Ja- es gibt tatsächlich ein Geheimnis um die besondere Qualität des Prosciutto di San Daniele – ein Geheimnis das seit vielen Jahren von den 31 lokalen Produzenten genützt wird – das spezielle Mikroklima von San Daniele del Friuli! Hier treffen die Winde aus den Karnischen Alpen mit den milden Brisen der Adria zusammen. Feuchtigkeit und Temperatur werden durch die Moränenhügel und das Wasser des Tagliamento bestimmt und werden von harzigen und salzigen Düften aus der Gegend ergänzt…….

Diese idealen Bedingungen und das Meersalz sorgen dafür, dass der Prosciutto di San Daniele perfekt ohne Verwendung von Konservierungsstoffen aufbewahrt werden kann …!
Die Schinkenkeulen werden mit Meersalz bedeckt und gekühlt aufbewahrt – die traditionell überlieferten Produktionsrichtlinien geben vor, dass die Keulen je Kilogramm Gewicht einen Tag im Salz liegen – dann ist die natürliche Konservierung gewährleistet – und der einzigartige Geschmack erzielt!
Zum Produktionsprozess gehört auch das besondere Pressen entlang der Muskelmasse – so kann das Salz tief eindringen und das Fleisch erhält die Konsistenz die für die folgende Reifung nötig ist – dieser Schritt in der Herstellung ist einzigartig und typisch für Prosciutto di San Daniele!
Das Gütesiegel – so erkennt man den original Prosciutto di San Daniele……
Prosciutto di San Daniele ist seit 21 Jahren ein anerkanntes Produkt mit geschützter Ursprungsbezeichnung (g.U.) DOP – dies betrifft auch den Verarbeitungsprozess!
Die geografische Ursprungsregion, die traditionelle Produktionsmethode, die exakte Kennzeichnung des Schinkens sowie die perfekte Qualität sowie der exzellente Geschmack sind ausschlaggebend für die Zertifizierung durch unabhängige anerkannte Zertifizierungsstellen…
13 Monate nach Beginn der Herstellung wird die Endkontrolle durchgeführt und der Schinken wird durch das Einbrennen des Markenzeichens des Konsortiums – das die 31 lokalen Produzenten vertritt – zertifiziert. Nur das Vorhandensein des Siegels garantiert die Echtheit des Prosciutto di San Daniele – neben dem typischen Spitzfuß der nur bei diesem Schinken beibehalten wird ein einfaches Erkennungsmerkmal!!!

Orangen-Fenchel-Salat mit zweierlei Grana Padano und Prosciutto di San Daniele Grissini – für 4 Personen
20 Orangenscheibenfilets
1 kleine Knolle Fenchel in feinen Streifen
0,1l natives Olivenöl
Saft einer Zitrone
Saft einer Orange
Aus diesen Zutaten einen Fenchelsalat herstellen.
1 rote Zwiebel in Streifen, blanchiert
50g schwarze Oliven, entsteint
Grana Padano Chips
Oliventapenade
4 Stück Grissini
4 Scheiben Prosciutto di San Daniele
Löffelweise dünn geriebenen Grana Padano auf einem mit Backpapier ausgelegten Blech verteilen, zu Chips zusammenlegen und im Ofen backen bis die Chips leicht golden sind. Abkühlen lassen.
Dann die Grissini mit Tapenade bestreichen und mit den Scheiben Prosciutto di San Daniele umwickeln. Den Fenchelsalat anrichten und die Grissini sowie die Grana Padano Chips als Garnitur anlegen.
Canneloni im Prosciutto di San Daniele Mantel mit Grana Padano Gratin und Tomatenvinaigrette – für 4 Personen
4 Scheiben Prosciutto di San Daniele
50g Grana Padano
4 gekochte Lasagneblätter
4 gebratene Auberginenscheiben
200g weicher Ziegenkäse
50g grob gehackt Cantuccini
Auf die Lasagneblätter die Auberginenscheiben, Prosciutto di San Daniele, Ziegenkäse und Cantuccini schichten, aufrollen, mit etwas Grand Padano bestreuen und 10 Minuten im Ofen bei 200 Grad backen.
100ml Tomatenpassata
½ rote Zwiebel
50 ml natives Olivenöl
50ml weißer Balsamico
Rucola als Garnitur
6 Kirschtomaten, geviertelt und entkernt
Alle Zutaten zu einer Vinaigrette vermischen und das Tomatenfleisch unterziehen. Mit Grana Padano und Rucola garnieren.

San Daniele del Friuli is a small picturesque town in Friuli-Venezia Giulia, many people do know the famous prosciutto that is produced here – but not many are aware why this special place is so ideal for the maturing of the delicate prosciutto – let us find out about the secrets around the unique conditions there!
Prosciutto di San Daniele – unique, like it can only arise here!
For this special Prosciutto, only meat from locally breaded pigs – the method of breeding them exactly follows a guideline – the wellbeing of the animals and human methods are the most important issues. Detailed rules establish the feeding – only high-quality products like cereals are used!
San Daniele and the micro climate – the most important ingredient for this delicious Prosciutto!
Yes – there is a secret about the incomparable quality of the Prosciutto di San Daniele – a secret that exists for many years and is used by the 31 local producers – the special micro climate of San Daniele del Friuli! Winds from the Carnival alps get mixed with soft breezes that are coming from the Adriatic Sea. Humidity and temperature are determined by the water of the Tagliamento – the local river – and the moraine hills – and are enhanced with the salty and resinous scents form the area
Additional ingredients …sea salt!
These ideal conditions and the sea salt guarantee that the Prosciutto di San Daniele can be conserved without any additional preservatives!
The hams are covered with sea salt and stored cooled – the traditional production guidelines state that the duration of the storage shall be one day per kilogram weight – then the nature conservation is ensured – and the outstanding taste as well!
Another important phase of the production process is the pressing of the mussels to enable the salt to deeply penetrate the meat – which is necessary for the consistency and maturation – this production step is unique and typical for the Prosciutto di San Daniele!
The seal – how to recognize the original Prosciutto di San Daniele……
For 21 years Prosciutto di San Daniele is a licensed product with certification of origin (DOP) – this includes also the specifications of production!
The geographic origin region, the traditional method of production, the exact classification of the ham as well as the perfect quality, and the excellent taste are mandatory for the certification by an independent agency of certification.
Upon completion of the 13th month from the start of the processing, the INEQ Certification Body performs the final inspection of the product. Only hams that meet all requirements of the Production specifications are certified and branded with the mark of the consortium, which includes the producer´s identification code.

Orange-Fennell-Salad with a duet of Grana Padano und Prosciutto di San Daniele Grissini – serves 4 people
20 orange Filets
1 small fennel tuber in fine stripes
0,1l native olive oil
Juice from 1 lemon
Juice from 1 orange
Prepare a salad with all these ingredients
1 red onion in stripes, blanched
50g black olives without stone
Grana Padano chips
Olive tapenade
4 pieces Grissini
4 slices Prosciutto di San Daniele
Put the grated Grana Padano in the size of chips on a baking tray covered with baking paper and bake them until golden brown, then let them cool down.
Cover the Grissini with the olive tapenade and wrap them with the Prosciutto. Serve the salad and use the Grissini sticks as decoration – bon appetit!
Cannelloni wrapped with Prosciutto di San Daniele with gratin of Grana Padano and und Tomato vinaigrette – serves 4 people
4 slices Prosciutto di San Daniele
50g Grana Padano
4 cooked Lasagne sheets
4 slices grilled aubergine
200g soft goat cheese
50g roughly chopped Cantuccini
Put the aubergines, the Prosciutto di San Daniele slices, the goat cheese, and the Cantuccini one after the other on the Lasagne sheets, roll them up, put the grated Grana Padano on top, and bake them for 10 minutes at 200 degrees in the oven.
100ml Tomato passata
½ red onion
50 ml native olive oil
50ml white Aceto Balsamico
Rucola salad for decoration
6 cherry tomatoes cut into 4 pieces without stones
Mix all ingredients to a vinaigrette, add the tomatoes and decorate with the rucola.
